Cooktop Cove: Treat yourself with a delicious and easy BBQ chicken bake

Barbecue chicken is the perfect summer-time dinner. Tangy and filling, it's a real crowd-pleaser at backyard barbecues. But, making barbecue chicken on the grill is a bit messy. If you want the same great taste, without the hassle of scrubbing down the grill, try turning your chicken into a casserole. 
The Pinning Mama details the simplicity of this dinner: a few pieces of boneless, skinless chicken breast, a few tablespoons of barbecue sauce, a yellow onion and shredded cheese (your favorite kind will do), is all you need.  After you've gathered your ingredients, you'll just need to layer everything in a dish and bake it. 
Pinning Mama notes that you'll need to bake this chicken a bit longer since it's covered with all the tasty toppings. If you don't want to risk burning the cheese, consider putting some tin foil over the top of the pan. 
If you don't have a lot of time after work, you can easily prep this same meal and cook it in your slow cooker. Or, if you want something a little different, this recipe from Family Fresh Meals. The recipe calls for brown sugar, some Italian dressing and a bit of Worchestershire sauce to create tasty shredded barbecue chicken that's perfect for sandwiches and tacos!
