When you're in the mood for takeout but want to save your pennies, ration your precious time and use up some leftover veggies in the process, then this is the dinner for you!
A brilliant stir-fry traditionally consists of fresh vegetables and rice (or noodles), cooked in a wok with a delicious sauce. This playful recipe utilizes everything that we love in a stir-fry while adding smoked sausage for a surprisingly delicious kick. Because the rice cooks along with the vegetables and stock in this casserole, all you have to do is pour everything into the dish and let it work its magic. So sit back, relax and get ready for a meal that is sure to satisfy all of your dinner cravings!
Asian Stir-fry and Sausage Casserole
2 cups basmati rice
4 cups chicken broth or chicken stock
1/2 pound smoked sausage, sliced
2 carrots, thinly sliced
1 red onion, thinly sliced
1 bell pepper, thinly sliced
3 cups roughly chopped broccoli
1-inch piece fresh ginger, minced
2 garlic cloves, minced
1/2 cup soy sauce
1 tablespoon honey
1. Preheat your oven to 400 degrees Fahrenheit. In a well-greased casserole dish, pour in the rice and place the sausage, sliced carrots, onion, bell pepper and broccoli on top.
2. In a large bowl, mix the chicken broth with the ginger, garlic, soy sauce and honey. Stir until well-mixed. Pour the liquid over the casserole. Place in the preheated oven for 35 minutes, or until rice is fully cooked.
Pro tip: For an added punch of flavor, sprinkle some toasted sesame seeds over the top of the dish before placing it in the oven.
