Cooktop Cove: How to make a 8-layer casserole
My 8-Layer Casserole is really just a meal of meat and potatoes, but it's one you can assemble in a casserole dish and bake right away, or leave in the freezer for busy weeknights. It's really got everything you need with thinly sliced potatoes, a zesty ground beef mixture, and more veggies than you can shake a stick at.
This is quite the opposite of a "dump and bake" casserole, as several of the layers require preparation in advance, but it's that gravy that really brings it all together while it bakes in the oven. It is a bit different than the typical 8-layer casseroles you'll find that usually include tomato sauce and sour cream, but trust me on this one. Once you taste it, you'll be happy you wandered off the beaten path.
