Cooktop Cove: Love chicken breasts? Here are 10 awesome slow cooker recipes you'll need to try
Chicken breast tends to be the go-o cut for chicken. It's lean and easy to cook. It's great grilled, sautéed, braised, baked and, yes, even slow cooked in a slow cooker. The 10 recipes below use chicken breast in all kinds of ways! With noodles, rice, tacos, sandwiches, wraps, and pasta!
The following recipes will leave you and your family completely satisfied without having to spend so much time in the kitchen. After some simple prep, the slow cooker takes care of the rest for you.
1. Chicken lo mein
If you always order Lo Mein (tossed noodles) or Chow Mein (fried noodles) at the restaurant or for take-out, then stop! With a slow cooker, you can produce the most delicious and authentic Asian noodle meals, with very little preparation. Believe me -- they are just as good, if not better, than take-out. Seriously, check out these recipes and mouthwatering pictures, and then throw away that take-out menu.
2. General Tso's chicken
You will also need to pan fry your chicken before you add it to the slow cooker in order to get a bit of a crust on your chicken. The cornstarch will also thicken your sauce as it cooks. But the real secret to this dish is in the sauce's balance of flavors. The right amount of soy for a bit of savory, sugar and honey for that sweet flavor along with the right amount of vinegar for a bit of tanginess and finally a few pinches of chile flake for just the perfect amount of spice. Getting this balance right will make all the difference in the end.
3. Hawaiian chicken tacos
Aloha! This Hawaiian Chicken Taco recipe doesn't get any easier than this! Chicken breast, BBQ sauce, and fresh pineapple. Done.
Serve up this super easy-to-make dish at your next Super Bowl Party, birthday extravaganza or anytime in between! Delicious. Your family and friends will be doing the hula dance after eating these yummy tacos.
4. Cajun chicken Alfredo
Using a traditional cream base for the Alfredo sauce, the addition of a savory Cajun (Louisianian) spice mix adds a wonderfully complex kick to an already delightful medley of flavors. One of our favorite things about this recipe is that unlike many slow cooker recipes, you can cook your pasta directly in your slow cooker, leaving it to soak up the incredible flavors of the sauce as it cooks. Check out the video for the full guided instructions.
5. Brown sugar chicken
If you are looking for a new chicken recipe, this is one of the best. The combination of sweet and savory is flavorful and easy to make. The best part: This meal is budget friendly and you probably have most of the ingredients you need, already stocked in the kitchen. Consider pairing this chicken with rice, noodles or quinoa for a complete meal!
6. Honey sesame chicken
This is a wonderful Asian-inspired chicken dish that will have your taste buds jumping for joy. Your family and friends will love the sweet and sour flavors. We recommend serving this over jasmine rice. Add steamed broccoli and snow peas, and you have yourself a complete meal!
7. Chicken caesar wrap
Does the prospect of lunch sometimes make you feel a little jaded? Bored, even? It shouldn't! Inject some va-va voom back into lunchtime with this fantastic recipe and start loving your lunch again! The combination of tender chicken and creamy Caesar sauce is an absolute winner and only needs the crunch of romaine lettuce to make it sing.
8. Orange chicken
With mouth-puckering citrus and savory chicken meat, the recipe below will become a go-to. Not only is it delicious, but it's also easy and convenient to make. Prep takes just minutes, and then you let it cook low and slow in the slow cooker for the afternoon. For an Asian twist, serve this chicken alongside sticky white rice and steamed broccoli. You can also pull the meat off the bone, shred it and serve it up on a bun with a crunchy, cold coleslaw. Whatever you pair it with will be divine.
9. Beer and Sweet Baby Ray's BBQ chicken
Who can resist a good barbecue? Even when you can't get out to the grill, you can still have that delicious flavor with zero hassle thanks to this easy recipe. We used Sweet Baby Ray's BBQ Sauce, and then kicked it up a notch with a few spices out of the pantry and a bottle of our favorite amber ale.
10. Coconut chicken
Chicken is stewed in tomatoes, coconut milk, and hot or mild curry spices, making it perfect for smothering over steamed rice. You can leave the peppers out for a truly set-it-and-forget-it meal, but I find that green and red peppers bring more color to the dish, and give it a little bit of texture. And if you're using a hotter curry spice, the sweetness of the pepper will help tame the heat.
