Cooktop Cove: Slow cooker Olive Garden-inspired chicken
By Jess Valentine
In life, we tend to complicate a lot of things when we really don't need to. I love recipes that are delicious and straight to the point. In the recipe below, we use Italian dressing with chicken breast in the slow cooker for a meal you'll never have to go to the restaurant for.
This recipe uses dried spices such as rosemary and oregano, but you can add any other Italian herbs you like — or use a few teaspoons of ready-made Italian seasoning. This recipe goes well with pasta, rice or salad, and the sauce in the slow-cooker even makes a tasty salad dressing.
Slow cooker Olive Garden-inspired chicken
2 cups Italian dressing (try Olive Garden's version)
½ cup shredded Parmesan cheese
½ lemon, juiced
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon onion powder
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
4 boneless, skinless chicken breasts
1. Add all ingredients except chicken to a 6-quart slow-cooker.
Mix well.
2. Add chicken, coating both sides in sauce.
3. Cover and cook on low for 3 hours.
4. Once ready, take chicken out and save the liquid into a container. Top chicken with the liquid before serving.
Serve with pasta, rice or salad and sauce from the slow-cooker.
