To make this delicious dish, all you need is a slow cooker and a little time to kill. It’s as easy as throwing everything into your slow cooker, setting it to low and going about your afternoon. Four hours later, your dinner is ready! The soy sauce and green onions give this dish a nice, savory flavor, while the ginger adds a wonderfully fragrant spice. Finally, sesame oil contributes a nutty finish. Serve with green onion and cilantro rice, and you have a complete meal!

2 pounds boneless, skinless chicken thighs
1 bunch green onions, cut into 1-inch pieces
1 tablespoon minced fresh ginger
3 tablespoons soy sauce
2 teaspoons sesame oil
salt and pepper to taste
Combine all ingredients in a 6-quart slow cooker.
Cover and cook on low for 3 hours.
Season with salt and pepper if needed.
Serve with green onion and cilantro rice.
Tip: Combine all ingredients in a resealable plastic bag and freeze for up to two to three weeks. Thaw overnight and cook in the slow cooker as indicated.
