Cooktop Cove: Spread peach slices over batter for a no-fuss Georgia delight

What is cobbler? It's delicious, that's what it is! Seriously though, cobbler is the delicious ending to a perfect summertime meal. What makes it so special (and easy to make) is the biscuit-like topping. No fussing with cutting pie crust. You just throw it together in a casserole dish and impress all your friends and family.
In this recipe, we flip the cobbler upside down and cook the delicious, easy-to-make biscuity crust on the bottom. These ingredients are all pantry staples, so you should have them on hand, ready to bake with that fresh batch of peaches.
I'll let you in on a secret: Substitute apples, cherries, or blueberries in for the peaches. Nearly all summer fruits are perfectly delicious, especially when topped with fresh whipped cream or ice cream!
Georgia peach cobbler
Servings: 8-10
Prep Time: 15 mins
Cook Time: 45 mins
Ingredients
1/2 cup (1 stick) butter, melted
1 cup self rising flour
1 cup white sugar
1 cup milk
1 teaspoon vanilla extract
1 cup brown sugar, lightly packed
4 cups fresh peach slices
1 tablespoon lemon juice
Instructions
1. Preheat the oven to 375 degrees F.
2. Prepare a 13x9 baking pan by pouring the melted butter into the center of the dish.
3. In a medium sized bowl, combine the self-rising flour and white sugar.
4. Add the milk and vanilla extract into the flour mixture.
Stir until it is just combined.
5. Pour the batter over the butter in the prepared baking dish (do not stir).
6. In a medium saucepan, cook the brown sugar, peach slices, and lemon juice over medium-high heat.
Cook until the sugar is melted and the peaches have released their juices.
7. Pour the peaches on top of the batter, again not stirring.
Make sure the peaches are evenly spread out.
8. Bake for 40-45 minutes, until the cobbler top is golden brown.
9. Allow the cobbler to sit for 10 minutes before serving.
10. Serve warm or cold.
