1 pound Jimmy Dean pork sausage roll
2 tablespoons olive oil
1 small yellow onion, diced
1 small red bell pepper, seeded and diced
1 jalapeno, seeded and minced
3/4 cup grated Colby jack cheese
1 large egg, beaten
2 cups Bisquick
3/4 cup whole milk
1/4 cup sour cream
Salt and pepper, to taste
Preheat the oven to 350 degrees F. Grease an 8x8 casserole dish and set aside.
Meanwhile, in a large skillet, heat the oil and sausage over medium-high heat until it is browned through. Remove the sausage to a bowl. Drain the grease, reserving 2 tablespoons in the skillet.
Cook the onion, red bell pepper, and jalapeno in the sausage grease until they have softened, about 5 minutes.
Remove the skillet from the heat and return the cooked sausage to the pan. Add the Colby jack cheese and stir to combine. Set aside.
In a large bowl, combine the egg, Bisquick, whole milk, and sour cream. Beat the mixture until there are no clumps of flour remaining.
Gently fold the sausage mixture into the Bisquick mixture and pour the batter into the prepared casserole dish.
Bake until the cake is brown on top and cooked through, about 1 hour.
Allow the cake to cool slightly before cutting into squares.
