Cooktop Cove: 20 Minutes Shrimp Sausage

20 Minutes Shrimp Sausage
2-3 tablespoons of olive oil
1 pound large shrimp, peeled and deveined
12 oz pre-cooked kielbasa sausage, sliced into rounds
1 red bell pepper, large dice
1 green bell pepper, large dice
1 onion thinly sliced
5 cloves garlic minced
1 large zucchini cut int rounds
3 teaspoons cajun seasoning
1/2 a bunch of onions green sliced
1/4 teaspoon of cayenne pepper
3 tablespoons water
Salt and pepper to taste
Put a large skillet on high heat, add in oil.
When oil is hot add in shrimp.
Season with salt and pepper to taste and 2 teaspoon of cajun seasoning.
Keep on high heat for 3-5 minutes or until shrimp is cooked.
Remove shrimp from skillet and set aside.
Keep skillet on high heat and add 1-2 tablespoons of oil if needed.
When oil is hot add in onion and garlic, Sauté for 2-3 minutes.
Add in the remaining teaspoon of cajun seasoning and cayenne pepper.
* Add in the sausage, cook for 2 minutes
Add in both bell peppers and zucchini, sauté for another 3-5 minutes until vegetables are tender.
Return shrimp into skillet.
Add in 3 tablespoons of water, mix well.
Season with salt and pepper to taste.
Top with green onions and serve.
Pro-tip: You can sub out kielbasa sausage for your favorite sausage.
