Cooktop Cove: Loaded Cauliflower

1 large sized cauliflower
4 oz of sour cream
2 cups of grated cheddar cheese
1 12 oz packet of cooked bacon, crumbled
4 green onions thinly sliced
2 tablespoons of butter
4 cloves fresh garlic, minced
1/4 teaspoon paprika
salt and pepper to taste
Cut cauliflower into large florets and steam in large pot until tender.
Drain any excess water.
Using a potato masher or fork, mash the cauliflower until you get the texture of chunky mashed potatoes.
Add in half the sour cream, bacon, half the cheese, half the green onions, butter, garlic, paprika, salt and pepper to taste.
Spread cauliflower mixture into a small casserole dish.
Top with remaining cheese.
Put under broiler until cheese is melted.
Dollop with remaining sour cream.
Sprinkle remaining bacon and green onions.
