2 tablespoons Greek yogurt
2 tablespoons ketchup
1 tablespoon chopped dill pickles
Dash Worcestershire sauce
1 tablespoon extra virgin olive oil
1 medium yellow onion, thinly sliced
1 pound grass fed ground beef
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
4 slices pepperjack
8 slices thinly sliced bread
To make the sauce, combine the Greek yogurt, ketchup, chopped pickles, and Worcestershire sauce in a small bowl. Set aside.
Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the onions and cook until they are soft and caramelized, about 15 minutes.
Remove the onions from the skillet and set aside.
In a small bowl, combine the beef, onion powder, garlic powder, and salt and mix until well combined.
Form the beef into 4 thin patties.
Heat the large skillet over medium heat and add the beef patties. Cook them for 5 minutes, until browned, and flip them over. Cook them for an additional 3 minutes, until mostly cooked through.
Add the onions and cheese and cover the skillet with a lid. Cook for an additional 2 minutes, until the cheese is melted.
Meanwhile, toast the bread slices and spread 1/2 tablespoon of sauce on each slice.
Top the bread slices with the beef patty.
