Cooktop Cove: Grab some cashews and blend them up to make this delectable creamy alternative to ricotta cheese
If you grew up eating cheese, it can be really hard to give it up, especially because storebought vegan cheeses aren't always very tasty!
However, it's easy to make your own vegan cheese at home using nuts — and the results are delicious! In fact, nuts are much more than a quick snack... they can be used in all sorts of recipes.
1. Cashew ricotta cheese (h/t The Simple Veganista)
If you want to make a vegan lasagna but are worried that it won't be cheesy enough, this cashew ricotta cheese is the solution. It's super easy to make, and you'll hardly notice the difference!
2. Vegan lentil walnut loaf (h/t Oh She Glows)
Even if you don't like traditional meatloaf very much, you'll probably love this vegan lentil walnut loaf. It's packed with protein, and it's so flavorful!
3. Almond feta cheese with herb oil (h/t Vegetarian Times)
This might not look exactly like real feta cheese, but it has the same salty flavor and rich texture. You can bake it if you want it to be more crumbly, but it's delicious unbaked as well!
4. Candied spiced nuts (h/t Minimalist Baker)
Of course, nuts go just as well with sweet flavors as they do with savory ones! These candied spiced nuts are delicious on their own, but they also make a great addition to salads.
5. Vegan walnut parmesan (h/t The Viet Vegan)
Pasta just isn't the same without parmesan, but this vegan walnut parmesan will satisfy your cheese cravings! It's super easy to make, and you can customize it by adding your favorite herbs and spices.
6. Nut "meatballs" with zucchini noodles (h/t I Heart Vegetables)
These nut meatballs and zucchini noodles look almost like traditional spaghetti and meatballs, but they're so much healthier! These nut meatballs would be great in other meatball recipes, too.
7. Easy pistachio nut cheese (h/t Nest and Glow)
You probably wouldn't want to eat dairy cheese if it was green, but this pistachio nut cheese is a whole different story! It's vegan, paleo, and gluten-free, and it's delicious on crackers.
