Cooktop Cove: Brush sauce onto cabbage slices and enjoy this delicious dish
For most of my life, I thought cabbage only had two purposes: coleslaw and soup. Those are the only two ways I had ever had it prepared growing up: raw and crunchy or softly simmered. It wasn't until I encountered the recipe below that my worldview changed forever. Roasted cabbage? What a bizarre concept. I wondered what it would taste like as I prepared it as new and exciting vegetable side dish for a dinner party. It was not only my favorite dish of the night but all of my friends' favorite, too!
Roasting the cabbage adds an extra layer of flavor to this seemingly boring vegetable. The caramelization creates an amazing flavor that simmered or raw cabbage simply lacks. It also happens to add a beautifully browned exterior to the dish, making it look spectacular. I like using granulated garlic in this recipe because it can burn in such a hot oven, but feel free to infuse minced garlic into the olive oil if you prefer the fresh flavor.
Garlic Roasted Cabbage Wedges
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
1 large head green cabbage, cut into 4-5 1-inch thick wedges
3 tablespoons extra virgin olive oil
1 1/2 teaspoons granulated garlic
1 teaspoon dried oregano
1/4 teaspoon kosher salt
1/8 teaspoon freshly cracked black pepper
1/2 lemon, juiced
1. Preheat the oven to 425 degrees F.
2. Line a baking sheet with parchment paper. Place the cabbage wedges on a single layer on the baking sheet.
3. In a small bowl, combine the olive oil, granulated garlic, dried oregano, salt, and pepper.
4. Brush both sides of the cabbage wedges with the oil mixture.
Don't miss the other side!
5. Cook the cabbage for 30 minutes, rotating the sheet tray halfway through.
6. Bring out of the oven. The cabbage should look roasted like the below.
Tip: Drizzle the cooked cabbage wedges with the lemon juice before serving.
