Cooktop Cove: Low carb tuna salad

Who doesn't love one a good tuna salad? It's reminiscent of our childhood days, yet it can be filled with fresh new flavors and include anything you're currently craving. And as you'll see in the recipe below, the one below is perfect, whether you're stuffing it into lettuce wraps or enjoying on a cracker (we won't tell!)
It's a simple recipe, actually. Just a few ingredients tossed together with tuna and mayonnaise, just like you remember from back in the day. A bit of citrus juice and some grainy mustard give it just enough pop to keep you going back for a second bite - and third and fourth. And all these big flavors will be ready to savor in just the few minutes it takes to get the salad prepared.
Low carb tuna salad
Servings: 4
Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes
Ingredients
2 cans of tuna, drained
1/2 cup cucumber, finely chopped
1/3 cup red onion, finely diced
1 cup mayonnaise
1 tablespoon celery seed
Juice of 1 lime
1 teaspoon salt
Directions
Place all ingredients into a large bowl and mix thoroughly to incorporate all ingredients.
Serve and enjoy!
