2 pounds carrots, peeled and sliced (about 6 large carrots)
3/4 cup sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla extract
2 tablespoons flour
3 eggs, beaten well
1/2 cup butter, softened, plus more for greasing

Preheat oven to 350 degrees Fahrenheit and grease a baking dish with butter.
Boil the carrots until they are very soft. Drain them very well and place them in a large bowl.
To the carrots add the sugar, baking powder, vanilla extract, and flour. Beat well with a hand mixer. Add the eggs and mix again. Add 1/2 cup of butter and mix well once more.
Pour the mixture into the prepared baking dish, making sure it's only about half-full, as the souffle will rise in the oven. Place the mixture in the oven and cook for about one hour, until the mixture has browned on top.
After removing the souffle from the oven, sprinkle lightly with powdered sugar.
