Cooktop Cove: How to make breakfast calzones
A few years ago, this writer worked at a pizza restaurant. Pizza was always around, whether it was a new pie the chefs were testing or a misfire. On the weekends, when her husband asked if she wanted pizza for dinner, she would emphatically shout "No!" She was so tired of pizza, but he really wanted to eat it too, so they started making breakfast calzones instead. It was different enough for her and pizza-like enough for her husband. This concoction has become her go-to entree whenever he wants to order takeout.
They love these calzones so much they often eat them for dinner, but they're perfect for a family brunch. Because these are common ingredients almost anyone has on hand, it's also a great dish to whip up when unexpected guests arrive. Although the recipe calls for ham as the main ingredient, cooks could substitute spinach and mushrooms to make it veggie or choose sausage and bacon if they want it to be meat-filled.
