5 eggs
1/4 cup whole milk
3/4 cup diced ham
3/4 cup mozzarella cheese
1 (16 ounce) package refrigerated biscuits
1 tablespoon butter, melted
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
In a medium-sized bowl, whisk the eggs and milk until they are well-combined. Add the ham and stir to combine.
In a medium-sized nonstick pan, scramble the eggs until they are just cooked. It is okay if they are a little bit runny.
Remove the eggs from the heat and add the mozzarella cheese. Stir to combine.
Remove the biscuits from the package and place them on a lightly floured work surface. Roll out each biscuit with a rolling pin until it is a 1/8-inch-thick round.
Divide the egg mixture amongst the 8 biscuits, placing it slightly below the center of the dough.
Fold the dough in half and use the tines of a fork to pinch the edges together.
Place the dough on the baking sheet and brush with melted butter. Bake for 15 minutes, until golden brown.
Serve immediately.
