Cooktop Cove: If you love pumpkin spice lattes but don't want the carbs, this recipe is for you

Forget pumpkin spice lattes – it's time to put a pumpkin spice muffin in that mug. The recipe that follows has all the delicious flavor of a pumpkin spice latte in low-carb muffin form.
This muffin is just as tasty with sweet potato in place of the pumpkin, so if you have some leftover roasted sweet potatoes, this is a fantastic way to use them up.
Low-carb pumpkin muffin in a mug

2 tablespoons almond flour
1 tablespoon coconut flour
1 tablespoon ghee, melted
1 tablespoon strong coffee
1 egg
2 tablespoons canned pumpkin
1 teaspoon granulated sweetener (such as Splenda)
1 pinch baking soda
1 pinch salt
1/4 teaspoon pumpkin pie spice
Combine all of the ingredients in a microwave-safe mug.
Microwave for 1-1 1/2 minutes, until cooked through.
Allow to sit for 1 minute before eating.
