Cooktop Cove: How to make apple-cinnamon low-carb mug cake

Few things delight the senses more than the smell of an apple-filled cake with cinnamon, and that's exactly what the recipe below offers. The only difference? This low-carb cake is quick and easy to make in the microwave.
This recipe makes enough for one, but you can easily scale it up – just be sure you only microwave one cake at a time to ensure even cooking. Top it with unsweetened whipped cream to make it an even more special treat.
Apple-Cinnamon Mug Cake

1 tablespoon ghee, melted
1 tablespoon granulated baking sweetener (such as Splenda)
1 tablespoon coconut flour
2 tablespoons almond flour
1/8 teaspoon baking powder
1 pinch salt
1 teaspoon cinnamon
1 egg
2 tablespoons unsweetened apple juice
1/8 cup shredded Granny Smith apple
Put all of the ingredients in a microwave-safe mug and mix well to combine.
Put the mug in the microwave and cook about 1 minute or until the cake is set.
Allow to cool 1 minute before serving.
