Cooktop Cove: How to make slow cooker brown sugar and garlic pork loin

There are a lot of ways to make pork loin. There are even a lot of ways to make pork loin in a slow cooker. But finding a recipe that won't make the pork completely fall apart and that comes with its very own sauce, with no mixing required after the pork has cooked? Those are hard to find. As you'll see in the recipe below, however, that's exactly what you'll get.
The sauce is actually more of a glaze than an actual sauce. The pork loin, however, gets poked with a fork several times before it's placed in the slow cooker so that glaze (and the flavor that comes with it) penetrates throughout the entire loin. That means you get flavor in every single bite. It's so pretty that it makes a perfect centerpiece for the table. You may not even want to cut into it to eat it. But who are we kidding? You will want to eat it and you'll be glad that you did.
Slow cooker brown sugar and garlic pork loin
Servings: 5
Prep time: 10 minutes
Cook time: 7 hours
Total time: 7 hours, 10 minutes
1 boneless pork loin roast (about 4 pounds)
2 cloves garlic, thinly sliced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup brown sugar
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
1. Cut small slits through the pork loin in several places with a sharp paring knife, making sure the knife does not cut all the way through the pork.
2. Place a piece of sliced garlic into each slit.
3. Season the pork loin with salt and pepper and place into a 6-quart slow cooker.
4. In a small bowl combine the brown sugar, Dijon mustard and balsamic vinegar.
5. Stir well to make sure all ingredients are thoroughly combined.
6. Spread brown sugar mixture over the entire pork loin in the slow cooker.
7. Place lid on and cook on high for 4 hours, or on low for 7 to 8 hours, until pork is tender but not falling apart.
8. Baste the pork with the liquid in the slow cooker two to three times during cooking.
