1 pound ground pork
Kosher salt and black pepper, to taste
1/4 cup applesauce
1/4 cup crushed pineapple, drained
1/4 cup small red onion, diced
1 clove garlic, minced
1/4 cup mayonnaise
4 sesame-seed buns
1/4 cup chevre goat cheese, crumbled
1/2 cup baby arugula leaves
Shape the ground pork into four patties. Make a dimple in the center of each patty, and season with salt and pepper to taste.
Heat the grill to medium-high. Place the burgers on the grill, and cook for eight to 10 minutes. Flip once, until they are cooked through and reach 160 degrees Fahrenheit on an instant-read thermometer.
Meanwhile, in a small bowl, combine the applesauce, drained pineapple, red onion and garlic. Set aside.
When the burgers are finished cooking, coat the bottom bun with 1 tablespoon mayonnaise.
Add a burger patty to each bun, and top it with the applesauce mixture.
Add the crumbled goat cheese and arugula to the burgers before serving.
