Give the tuna salad of your childhood a makeover with the recipe below. Tuna and avocado unite in a salad seasoned with lemon juice, red onion, olive oil and just a touch of mayonnaise. The recipe below is sure to become a household favorite!
Keep this tuna salad low in carbs by serving it in lettuce cups instead of on bread. You could also serve it in hollowed out tomatoes, red bell pepper halves or even mounded atop avocados. However you serve it, it's going to be delicious.
Low-Carb Tuna Salad

12 ounces tuna, canned in olive oil, drained
1/4 red onion, minced
1 stalk celery, minced
1 avocado, diced
1/4 cup mayonnaise
juice of 1/2 lemon
2 tablespoons extra-virgin olive oil
1/4 cup freshly chopped flat-leaf parsley
salt and freshly cracked black pepper
Combine all of the ingredients in a bowl with a rubber spatula, folding to mix well without crushing the avocado too much. Serve immediately.
