For the waffles
1½ cups all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 tablespoon brown sugar
1 cup buttermilk
1 cup apple cider
6 tablespoons unsalted butter, melted
1 large egg, lightly beaten
For the syrup
1 cup apple cider
1 cup maple syrup
Preheat the waffle iron.
In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and brown sugar. Add the buttermilk, cider, melted butter, and egg and mix until smooth.
Make the syrup. In a saucepan, stir together the cider and maple syrup and heat over medium heat. Cook, stirring occasionally, until the mixture is thickened, about 15 minutes.
Meanwhile, cook the waffles according to the manufacturers instructions.
Serve the waffles with the syrup drizzled over the top.
