1/3 cup unsalted butter, melted
1/3 cup Frank's Hot Wing Sauce
1 tablespoon honey
2 cups shredded rotisserie chicken
Kosher salt
Freshly ground black pepper
8 large lettuce leaves
2 celery stalks, diced
1/2 cup chunky blue cheese dressing (or substitute ½ cup crumbled blue cheese)
Melt the butter in a large skillet set over medium-high heat. Stir in the hot sauce and honey, and heat to a simmer. Stir in the shredded chicken and cook just until heated through, about 2 minutes. Season to taste with salt and pepper.
To serve, arrange the lettuce leaves on serving plates and spoon the chicken mixture into them. Garnish with the diced celery and dressing.
