Cooktop Cove: How to make Southern buffalo pimiento cheese

You can’t get through a Southern garden party without indulging in pimiento cheese. It’s a classic blend of cheddar cheese, mayonnaise and chopped pimientos — and it’s ubiquitous in the South. For such a simple spread, pimiento cheese is surprisingly delicious. The recipe below takes it a step further, adding hot wing sauce to kick up the flavor even more.
Serve this spread the way most Southerners do — spread on white bread as a simple sandwich or as a party dip with crackers. You can even use it to top a juicy burger or a baked potato. I like to serve it with celery sticks for scooping, which strengthens the flavor connection to my favorite hot wings even further.
Southern Buffalo Pimento Cheese

1/2 cup mayonnaise
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
¼ to ½ cup hot wing sauce, such as Frank's Red Hot Wing Sauce
2 cups grated sharp cheddar cheese
¼ cup crumbled blue cheese
3 tablespoons chopped pimiento
In a medium bowl, whisk together the mayonnaise, Worcestershire sauce, garlic powder and hot sauce until well blended. Stir in the cheddar and blue cheeses along with the chopped pimiento.
Cover and refrigerate for at least an hour before serving to allow the flavors to meld. Let the spread come to room temperature before serving.
