Cooktop Cove: Upgrade chicken breasts with this delicious mushroom stuffing

Say goodbye to bland chicken breasts. The following recipe not only ensures that this choice meat is seasoned to perfection, it also stuffs them with so much flavor that those boring chicken breasts will quickly become a thing of the past. These are stuffed with mushrooms and garlic butter, but once you make them yourself, you'll be thinking of many different things to stuff them with.
The chicken breasts are stuffed and then baked in the oven to reach savory perfection. However, they could also be made in a pan if you want to fully control how "golden" they become. Just remember that flipping them in a pan can cause much of that scrumptious stuffing to spill out, so tread carefully if this is the route you choose.
Garlic Butter Mushroom-Stuffed Chicken

4 tablespoons butter
1 cup cremini mushrooms, sliced
4 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 tablespoon olive oil
4 boneless, skinless chicken breasts
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Heat the butter in a large frying pan over medium heat. When it's melted, add the mushrooms and cook for about 10 minutes, until they just start to brown.
Add garlic, parsley, 1/2 teaspoon of salt and 1/2 teaspoon ground black pepper to the frying pan. Stir and cook for 1 more minute, then remove from the heat.
In a small bowl combine the remaining 1/2 teaspoon of salt, the remaining 1/2 teaspoon of black pepper, the onion powder, garlic powder and paprika. Add the olive oil and mix well to form a paste.
Butterfly each chicken breast, cutting it lengthwise through the center, but not cutting all the way through.
Evenly divide the mushroom mixture between each chicken breast, placing it on one side of the breast. Spoon some of the butter over the top of the mushrooms as you do.
Fold one half of the chicken breasts over the mushroom stuffing. Use toothpicks to secure the two halves together so the filling doesn't spill out.
Rub the spice mixture evenly over each chicken breast.
Place the baking sheet in the oven and bake for 30 minutes, or until the chicken is cooked throughout and no longer pink.
Remove the toothpicks before serving.
