1 can black beans, drained and rinsed
1 ½ cups sweet corn, frozen and thawed
1 medium red onion, diced
1/2 red bell pepper, diced
1 cup cherry tomatoes, quartered
1 tablespoon red wine vinegar
Juice of half a lime
1 teaspoon fajita seasoning
1 teaspoon Cajun spice
3 tablespoons fresh cilantro, chopped
Salt and pepper to taste
In a large bowl, combine the beans, corn, onion, pepper and tomatoes.
Add the vinegar, lime juice, seasonings and cilantro, and stir.
Add salt and pepper to taste, and serve.
