1 1/2 8oz packages cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup (approx 6 strips) of bacon, cooked and crumbled
1 packet Ranch seasoning mix
2 green onions, finely chopped
In a large mixing bowl, add the cream cheese and cheddar cheese.
Using a hand mixer, thoroughly blend the two cheeses together until they are well blended.
Add all other remaining ingredients to the mixing bowl. Carefully fold all the ingredients together until the cheese mixture is well blended.
Using clean hands, shape the cheese mixture into a ball shape. Return to the mixing bowl, cover with plastic wrap, and place in the fridge. Use a little milk if the mixture is too stiff.
Allow cheese ball to set in the fridge for at least one hour.
After minimum one hour, remove cheese ball from the fridge, and allow to sit for 5 mins to take the cool off.
Place the cheese ball on a serving dish, garnish with extra green onions and bacon bits, and serve surrounded by hearty crackers or pita chips.
Pro-tip: Make sure your cream cheese is as close to room temperature as possible at the start. This will make combining the other ingredients much easier!
Pro-tip: This is not exactly a diet-friendly dish, but you can make it a little healthier but using low-fat cream cheese, and replacing the crackers with a fresh vegetable crudité of carrots, celery, and sliced bell peppers.
