Cooktop Cove: How to easily peel potatoes

Yellow potatoes, such as Yellow Finn and Yukon Gold, contain more moisture than other varieties of potatoes. And because of this, they fall apart less easily after being boiled. Because yellow potatoes hold their shape better after boiling, they are easier to peel.
Some people insist on peeling potatoes prior to boiling them. The process can become time consuming and, quite frankly, annoying. There's an easier way to peel potatoes, though, and this method will cut down on time and frustration.
Materials
- 3-quart pot
- Paring knife
- 5 yellow potatoes
- Large bowl
- Parsely
Instructions
1. Use a paring knife to cut a shallow horizontal line around the circumference of each potato.
2. Fill a three-quart pot with water and bring it to a boil.
3. Place each potato into the boiling water. Ensure the water covers the potatoes.
4. Reduce heat to medium and boil potatoes for 15 to 20 minutes.
5. Drain water and allow potatoes to cool.
6. Remove a potato from the pot, and use your fingers to peel skin away from the cut in the potato. The potato skin should almost roll off the potato.
7. Continue peeling the skin off all the potatoes, using the same method described in the previous step.
8. Place peeled potatoes in a large bowl and garnish with parsley.
