8 strips bacon
2 pounds ground beef
2 large eggs
1 onion, diced
1 garlic clove, minced
3/4 cup panko breadcrumbs
1-1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup BBQ sauce, divided
In a skillet over medium-high heat, cook the bacon until lightly browned on both sides, about 6 minutes. Transfer to a paper towel-lined plate. Once cooled, crumble.
In a large mixing bowl, combine the beef, eggs, onion, garlic, breadcrumbs, salt, pepper, 1/2 cup of the BBQ sauce and the reserved bacon.
Mix well and form the mixture into a loaf shape in the slow cooker.
Spread the remaining 1/2 cup of BBQ sauce over the top.
Cover and cook on low for 8 hours or high for 4 hours.
Broil for 10 minutes.
Let rest for about 5 minutes before slicing and serving.
