Cooktop Cove: How to make Instant Pot chicken legs
By Robin Donovan
The Instant Pot and other electric pressure cookers make serving dinner unbelievably easy. The recipe below is so simple and quick, you’ll want to do it regularly. Fortunately, the resulting crispy, tender chicken legs are tasty enough that you’ll be happy to put them on your table often.
This recipe requires just a handful of ingredients, but it is full of flavor. The Instant Pot cooks the chicken legs to tender, moist perfection. A quick run under the broiler gets the chicken perfectly browned with a nicely crisped skin, while keeping it impossibly juicy.

10 minutes, plus 15 minutes to come to pressure and 5 minutes to release pressure
35 minutes
2 teaspoons paprika
1 1/2 teaspoons kosher salt
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
10 chicken drumsticks (about 3 pounds total)
1 cup chicken broth or water
Cooking spray
In a small bowl, mix the paprika, salt, garlic powder and pepper.
Rub the spice mixture all over the drumsticks.
Place the trivet in the Instant Pot along with the broth or water, and arrange the drumsticks on top of the trivet.
Close the lid, and set the valve to the sealing position. Choose high pressure, and set the timer for 10 minutes.
When the cooking time is up, allow the pressure to release naturally for five minutes, and quick release any remaining pressure.
Heat the broiler to high. Arrange the drumsticks on a rimmed baking sheet that has been covered with foil and sprayed with cooking spray.
Cook the drumsticks under the broiler for about two minutes per side, until the skin is browned and crisp.
Serve hot.
