2 cups green beans, cut
4 ounces cream cheese, softened
1/2 cup heavy cream
2 tablespoons French fried, dried onions
1 tablespoon soy sauce
3 ounces shredded mild cheddar
Kosher salt and freshly ground black pepper
In a saucepan, cook the green beans by boiling or using a double boiler to steam them until al dente texture, about 5-7 minutes. Drain and pat the green beans dry to remove all moisture.
In another saucepan, heat the cream cheese and heavy cream over medium heat, whisking them together until the cream cheese has fully melted.
Add the French fried onions and soy sauce to the mixture, and stir to combine. Stir until the sauce is consistent and can coat the back of a spoon.
Add the par-cooked green beans into the saucepan, and toss in the sauce to fully coat, stirring frequently. Allow sauce to cling to the green beans, and leave to simmer for 5 more minutes.
Taste for seasoning, and adjust with salt and pepper.
Pour the green beans into a greased baking dish, flattening out the top as much as possible. Sprinkle cheddar cheese across the entire top of the dish.
Place the baking dish under a broiler until the cheese melts and turns golden and bubbly.
Remove from the broiler, and allow to cool for 5 minutes. Garnish with more dried onions on top (optional), and serve in the baking dish.
Pro-tip: Remember to completely dry off the green beans before cooking. Any liquid on them will make the sauce loose and runny.
