2 lbs French-style green beans (haricots verts), cleaned and trimmed
Three cloves garlic, minced
3/4 cup slivered almonds
3 tablespoons olive oil
Kosher salt & freshly ground black pepper
Bring a large pot of salted water to a rolling boil. Add the green beans and cook until just about tender, about four to five minutes. Remove beans from the water, drain, and set aside.
In a large skillet, heat the olive oil over medium heat. Add the garlic, and stir until garlic becomes lightly browned and fragrant, about one minute.
Add the almond slivers to the skillet, and sauté together until garlic and almonds are golden brown, about two to three minutes.
Add the green beans to the skillet, and toss them in the garlic & almonds until fully coated. Season with salt and pepper to taste. Stir until flavors are blended, about two minutes.
Serve on a large platter, topped with raw slivered almonds. Enjoy hot or cold!
Pro-tip: If you can't find French-style haricots verts, this recipe will be just as good with regular green beans!
