Cooktop Cove: This slow cooker asparagus recipe is pure genius

The slow cooker is a great way to cook asparagus when you want to set it and forget it. This dish is ideal for a holiday meal or dinner party when you have other, more hands-on dishes to concentrate on or when your oven is already full. The recipe below infuses the asparagus with the flavors of fresh lemon and garlic. It’s a great side for roasted meats or poultry.
This method works best with thicker stalks of asparagus, although you can use thinner ones as well. Snapping the woody ends off of the stalks is the best way to ensure that you’re left with only the tender, edible part of the asparagus. Serve this warm straight from the slow cooker.
Slow cooker Lemon and Garlic Asparagus

2 pounds asparagus, woody ends snapped off
1/3 cup freshly squeezed lemon juice
½ cup water
2 garlic cloves, minced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 or 5 lemon slices
Arrange the asparagus in a slow cooker.
In a small bowl, stir together the lemon juice, water garlic, salt, and pepper. Pour the mixture over the asparagus.
Arrange the lemon slices on top. Cover the slow cooker, and cook on low for 2 hours. Serve hot.
