Cooktop Cove: Dump raw rice & cream cheese in slow cooker. In no time, enjoy a tasty side dish

When you’re cooking a nice meal for family or friends, oven and stovetop space is often at a premium. Plus, a side dish is just one more thing to think about and fuss over. This easy slow-cooker rice dish is a great solution. Just mix the ingredients in the slow cooker and turn it on, then you can go about cooking the rest of the meal.
As easy as this dish is to make, you’ll be delighted by the rave reviews it gets. Rice has never tasted so good. Adding chicken broth (you could substitute vegetable broth for a vegetarian version), spinach, onion, garlic, and cheddar cheese takes it to a whole new level.
Slow cooker spinach rice
Servings: 6
Prep Time: 5 mins
Cook Time: 2 hrs 15 mins
Total Time: 2 hrs, 20 mins
Ingredients
1 onion, diced
2 garlic cloves, minced
4 cups chicken broth
2 (10-ounce) packages frozen chopped spinach, thawed and excess water squeezed out
1 (8-ounce) package cream cheese, at room temperature
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cups uncooked long-grain white rice
2 cups shredded Cheddar cheese
Directions
1. In a slow cooker, add in onions.
Add chicken broth.
Add spinach next.
Dump in the cream cheese.
Add salt and pepper.
Dump in the raw rice.
Stir to combine.
2. Cover and cook on high for 2 hours or on low for 4 hours.
3. Uncover and sprinkle the cheese over the top.
Cover again and let stand for 15 to 20 minutes, until the cheese is melted.
Once melted, stir to combine.
Serve!
