1 pound bacon, diced
1 medium onion, minced
2 1/2 pounds potatoes, peeled and grated
3 eggs
1/4 teaspoon black pepper
Preheat the oven to 375 degrees.
Cook the bacon in a skillet until crispy. Reserve the bacon and fat separately.
Add 1 tablespoon of bacon fat back to the pan and add the onion. Cook over high heat until browned.
Use a pastry brush to grease a 9x13 inch casserole dish with bacon fat. Set aside.
In a bowl, combine the cooked bacon, cooked onion, potatoes, and reserved bacon fat. Stir well to combine.
Beat the eggs in a separate bowl, then add to the bowl of potatoes and bacon, along with the pepper. Stir well to combine.
Pour into the prepared baking dish and bake for 1 hour or until crispy.
