2 pounds 80/20 ground beef
1 medium white onion, diced
1 can condensed cheddar cheese soup
1 can condensed golden mushroom soup
1 package (16 ounces) frozen shoestring french fries
2 cups shredded cheddar cheese
½ teaspoon garlic powder
Kosher salt
Freshly ground black pepper
Preheat the oven to 375 F.
Heat a large skillet on medium-high heat, and add the ground beef and diced onion. Cook until the beef is brown and the onion translucent. Remove from heat, drain the grease, but leave meat in the skillet.
Season the meat with garlic powder. Add salt and pepper to taste.
Return the skillet to the heat, and add the golden mushroom and cheddar cheese soups. Stir until well blended and the mixture is heated through.
Remove mixture from the stove and carefully pour into a non-greased baking dish. Cover the mixture with a single layer of frozen shoestring fries.
Place the baking dish in the preheated oven and bake until the fries have become golden brown, approximately 20-25 minutes.
When the fries are golden, remove the casserole from the oven, and cover the fries with the shredded cheddar cheese. Return casserole to the oven just until the cheese has melted.
Remove casserole from the oven, and serve immediately with toppings such as shredded lettuce, diced tomatoes, chopped pickles/relish, ketchup, mustard or Thousand Island dressing.
