Cooktop Cove: You'll never tire of this vegetable dish because ... yes, bacon. Need we say more?

With just a few ingredients, you can have a side dish that will knock your socks off. Make plump spears of asparagus one of the ingredients, and then add smoky, salty, flavorful bacon. This dish is easy to make and guaranteed to become a favorite.
Try this quick side dish, and you’ll be amazed at how much flavor it packs, considering that it has only six ingredients, including salt and pepper. If you don’t have a shallot, you can substitute a couple of cloves of minced garlic or a fourth of a red onion, thinly sliced. The Parmesan cheese isn’t totally necessary, but I love the texture and flavor it adds to the dish, so I wouldn’t recommend skipping it.
Fried asparagus with bacon

4 slices bacon, chopped
1 pound fresh asparagus, trimmed
1 shallot, thinly sliced
Pinch of salt
Pinch of freshly ground black pepper
2 tablespoons freshly grated Parmesan cheese
In a medium skillet over medium-high heat, cook the bacon, stirring occasionally, until crisp, 4 to 5 minutes.
Add the shallot and asparagus to the skillet, along with the salt and pepper. Cook, stirring occasionally, for about 5 minutes more, until the asparagus is tender.
Serve hot, garnished with the Parmesan cheese.
