Cooktop Cove: This 6-ingredient slow cooker recipe turns carrots into a gourmet treat

Carrots boast a natural sweetness, highlighted in the recipe below with the addition of lemon and honey. They also get a subtle note of herbal flavor, thanks to lemon thyme. Unlike its cousin, regular thyme, lemon thyme has almost no touch of bitterness. Instead, it's aromatic and zesty: the perfect seasoning for tender carrots.
This recipe is so easy to make when you take advantage of your slow cooker, which will allow the carrots to soak up all the flavor of the glaze without ever becoming mushy or soggy. At three hours of cooking, the carrots should still retain quite a bit of snap; four hours will leave them slightly more tender.

¼ cup butter, melted
1 tablespoon freshly chopped lemon thyme
2 lemons, juiced and zested
1 tablespoon honey
2 pounds baby carrots
Salt and pepper
Whisk the butter, lemon thyme, lemon juice, lemon zest and honey together. Combine with the carrots, season with salt and pepper, and transfer to a slow cooker.
Cook on high heat for 3 to 4 hours, stirring halfway through.
