Pairing chicken with apricots may seem like a strange idea at first, but never fear. When cooked together, the chicken and apricots form a sweet and savory mixture that's rich in flavor and really pops on the plate. In the recipe below, skinless, bone-in chicken thighs are smothered in a mixture of apricot jam, mustard, onions, and garlic. A trip through the slow cooker allows all of the flavors to mix and meld, resulting in a tasty dish that takes barely five minutes to throw together.
The sauce for this chicken demands to be mopped up with something delicious. Steamed rice is a no-brainer, but you could also opt for egg noodles or mashed potatoes. Or, you could make your life even easier, and simply serve the dish with sliced fresh bread.

6 boneless, skin-on chicken thighs
1 onion, thinly sliced
1 cup apricot preserves
2 tablespoons Dijon mustard
2 tablespoons soy sauce
Whisk together the apricot preserves, soy sauce, mustard and onions into the slow cooker, then pour over the chicken and toss until well-combined.
Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
