½ pound bacon
1 pound ground pork or ground pork sausage
2 green onions, sliced, dark green parts reserved separately
8 eggs
1 cup whole milk
½ cup pure maple syrup
8 toaster waffles, chopped
1 cup sharp cheddar cheese, grated
Salt and pepper
Preheat the oven to 375 F.
Cook the bacon in a skillet over medium-high heat until crisp. Set aside on paper towels to cool, then dice.
Drain off all but 1 tablespoon of the bacon fat. Add the ground pork or sausage, breaking it up with a spoon, and cook until browned on all sides. Remove from the pan with a slotted spoon, and set in a bowl.
Drain off and discard all but 1 tablespoon of the fat from the pan. Add the white and light green portions of the green onions to the pan. Cook until slightly browned, 1-2 minutes. Remove from the pan, and combine with the sausage.
In a large bowl, beat the eggs and milk together. Add the maple syrup, and whisk well to combine. Season with salt and pepper.
Grease a 9-by-13-inch baking dish. Arrange a layer of chopped waffles in the bottom, and top with half of the sausage and onion mixture and half of the cheese. Top with the remaining waffles, followed by the remaining sausage. Cover with the egg mixture, and top with the remaining cheese.
Bake for 45 minutes, or until the eggs are cooked through.
Remove from oven, and let stand 5-10 minutes before topping with the reserved chopped bacon and green onion tops.
