Cooktop Cove: This from-scratch lemon pie might just be the easiest dessert you've ever made

Wouldn't you love to find a delicious, impressive, from-scratch dessert that doesn’t take all day to make? This recipe just might be the answer to your prayers. It's possibly the simplest dessert you’ll ever make, and the flavor is amazing.
Just toss the filling ingredients — and there are only five — into a blender, pour the mixture into a pie shell, and bake. Use a homemade pie shell or a frozen one from the supermarket. Because it uses a whole lemon, peel and all, it delivers intense citrus flavor that will have everyone begging for your secret.
5-ingredient blender lemon pie

4 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 lemon, sliced into wedges and seeded
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
1 pie shell
Confectioners' sugar
Heat the oven to 350F.
In a blender, combine the eggs, butter, lemon wedges, granulated sugar and vanilla extract, and blend until smooth.
Pour the mixture into the pie shell.
Bake for 40 to 45 minutes, until set.
Remove the pie from the oven, and set it on a rack to cool completely.
Sprinkle confectioners' sugar over the top if you like, and slice into wedges to serve.
