For the batter:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup sugar
1 egg
1/4 cup sour cream
3 tablespoons milk
1 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup strawberries, diced
For the glaze:
1 cup confectioners sugar
1/4 cup strawberry jam
1/4 cup heavy whipping cream
1/4 teaspoon vanilla extract
1/4 teaspoon red gel food coloring
Heat the oven to 400 F.
In a medium mixing bowl, whisk to combine the flour, baking powder, salt and sugar.
In a small mixing bowl, combine the egg, sour cream, milk, melted butter and vanilla extract.
Add the wet ingredients to the dry ones, and mix until just combined.
Add the diced strawberries and mix one more time.
Grease a donut pan with nonstick spray.
Add the batter to a plastic bag (or piping bag) and cut off one of the corners. Pipe the batter into the donut pan until each well is about 3/4 full.
Bake 8 to 12 minutes, or until golden brown. Set aside to cool.
While the doughnuts cool, combine the confectioners sugar, jam, whipping cream, vanilla extract and gel food coloring in a small bowl and whisk until fully combined.
Once the doughnuts are cool enough to touch, dip each in the glaze and place on a wire rack over a piece of parchment paper to allow the glaze to set.
Once set, dip each doughnut in the glaze one more time, and top with sprinkles, coconut flakes or nuts if you like.
Return each doughnut to the wire rack to set completely before serving.
