1 cup unsalted butter, softened
1 cup white sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
¼ teaspoon salt
1 jar coarse sparkling sugar
In a large mixing bowl, add the butter and white sugar. Cream them together using an electric stand or hand mixer until smooth.
Add egg and vanilla to the bowl, and mix until blended.
Slowly add the flour and salt to the bowl, mixing together until a dough is formed. Cover the dough, and place it in the fridge to chill for one hour.
Preheat the oven to 350 F, and lightly grease a baking sheet with nonstick cooking spray, or line the sheet with parchment paper.
When the dough is chilled, remove it from the fridge. Lightly flour a flat surface, and roll the dough out to ¼-inch thickness. Cut out cookies using a cookie cutter or the rim of a glass. Arrange the cookies on the prepared baking sheet in a single layer.
Sprinkle coarse sparkling sugar over the tops of the cookies, lightly pressing it into the dough so it sticks.
Place the baking sheet in the oven, and allow the cookies to bake until they're set and the edges are slightly browned, about 10 minutes.
Remove the baking sheet from the oven, and place the cookies on a baking rack. Cool for 10 minutes.
Serve warm.
