Cooktop Cove: This slow cooker carrot dish couldn't be any easier

Carrots are an easy vegetable to love. Their flavor is mild and sweet, and they add beautiful bright orange color to your dinner plate. Even kids are generally pretty easy to sell on carrots. That’s especially true of this dish, in which they're slow cooked in butter and then tossed with sweet honey, spicy cinnamon, and fresh garden herbs.
This dish makes a perfect side for holiday meals like Thanksgiving, Passover, or Easter. Serve it alongside roasted turkey, baked ham, roast beef, or a braised leg of lamb. But don’t save it for special occasions! It’s easy enough to make on a regular weekday.
Slow Cooker Honey Cinnamon Carrots with herbs

2 pounds carrots, peeled, split in half if thick, and cut into 3-inch-long pieces
3 tablespoons unsalted butter, melted
2 tablespoons water
1/3 cup honey
1 teaspoon ground cinnamon
2 teaspoons fresh thyme leaves or ¾ teaspoon dried thyme
1 teaspoon chopped fresh rosemary
½ teaspoon kosher salt
In the slow cooker, combine the carrots and melted butter and toss to coat. Add the water.
Cover the slow cooker and cook on high for 3 hours.
Stir in the honey, cinnamon, thyme, rosemary, and salt until well combined. Serve warm.
