Cooktop Cove: These chicken taco lettuce wraps are the low-carb lunch of your dreams

Taco night just got a whole lot healthier thanks to the recipe below! With these tacos, there's no tortilla or shell in sight. Instead, crisp romaine lettuce envelops seasoned grilled chicken, avocado, tomato, and onion. A drizzle of lime and a sprinkling of cilantro, and these tacos are ready to enjoy!
As written, the recipe below boasts no dairy at all. But if lactose isn't an issue for your family, you can keep them low-carb and punch up the flavor with a sprinkling of grated cheddar cheese or a dollop of sour cream. Either one will be a welcome addition to the already flavorful tacos.
Low-carb chicken taco lettuce wraps

1 pound boneless, skinless chicken breasts
2 tablespoons taco seasoning
2 cloves garlic, minced
1 tablespoon olive oil
8 leaves romaine lettuce
1 avocado, thinly sliced
¼ cup tomato, diced
¼ cup red onion, diced
¼ cup cilantro, chopped
1 lime
Combine the chicken, spices, garlic, and olive oil in a large bowl. Toss to combine. Marinate for at least 10 minutes and up to 24 hours.
Heat a grill pan over medium-high heat. Grill the chicken about 10 minutes per side, or until cooked through. Slice thinly, and set it aside.
Arrange the chicken, avocado, tomato, and onion evenly in each romaine leaf. Top with cilantro and lime juice.
