Cooktop Cove: These turkey wraps are low in carbs and high in flavor
By Emily Monaco
Crunchy iceberg lettuce leaves stand in for tortillas in this recipe that's a fun play on a club sandwich with almost no carbs. To make this recipe, layer sliced turkey over lettuce leaves. A sun-dried tomato mayonnaise adds tons of flavor and zing. Add a few creamy slices of avocado, and the wraps are ready to enjoy.
When choosing deli turkey, opt for slices free of sugar. Otherwise, these wraps won't be nearly as healthy — or as low in carbs! Ask at the deli counter or read the label carefully. Any ingredient ending in "-ose" is actually sugar in disguise.

1/2 cup mayonnaise
5 large basil leaves, torn
2 sun-dried tomatoes, packed in oil
4 large iceberg lettuce leaves
8 slices gluten-free, sugar-free deli turkey
1 avocado, cored and thinly sliced
Pulse the mayonnaise, basil leaves and sun-dried tomatoes in the food processor until smooth. Set aside.
Lay out each iceberg lettuce leaf, and top with two slices of turkey.
Spread a thin layer of the flavored mayonnaise over the top, and finish with a layer of avocado and one more dab of the mayonnaise.
If you like, fold the bottom of the wraps up and the sides in. Roll like a burrito, and slice in half before serving.
