Directions

If your slices are thicker, pound them gently between sheets of plastic wrap to make them thinner and more tender before rolling. Provolone is traditional and melts beautifully, but you can swap in another good melting cheese like mozzarella or a mild white cheddar if that’s what you have; just keep the slices thin so they roll easily. The green pepper can be changed to red or yellow bell pepper for a sweeter flavor, or mixed colors for a prettier pan. If you’d like a bit of heat while still staying within four ingredients, choose a spicy green pepper variety instead of bell.
