1 1/2 pounds beef stew meat, trimmed and cut into bite-size pieces
6 cups low-sodium beef broth
1 cup pearl barley, rinsed

3 ribs celery, sliced

Directions
Place the raw beef stew meat in the bottom of a 5- to 7-quart slow cooker, spreading it out in an even layer so the pieces aren’t piled too high in one spot.
Scatter the chopped onion, sliced carrots, and sliced celery evenly over the beef. These vegetables will soften and flavor the broth as everything cooks.
Sprinkle the rinsed pearl barley over the top of the beef and vegetables, making sure it’s in an even layer so it cooks evenly and absorbs the broth.
Season everything in the slow cooker with the kosher salt and black pepper. You can adjust the seasoning later, but this gives the soup a good base flavor as it simmers.
Slowly pour the beef broth over the raw beef stew meat, vegetables, and barley, making sure the broth covers the ingredients. If anything is poking above the liquid, gently press it down with the back of a spoon.
Cover the slow cooker with the lid and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the beef is very tender, the barley is plump and soft, and the vegetables are fully cooked.

If you prefer a thinner soup, reduce the barley to 3/4 cup; for a thicker, almost stew-like texture, increase to 1 1/4 cups and be ready to add an extra cup of broth near the end. This also works well as a freezer meal: place the raw beef, chopped onion, carrots, celery, and barley together in a freezer bag, freeze flat, then thaw overnight and dump into the slow cooker, pouring broth over the top in the morning.
