Sprinkle the chicken legs all over with the kosher salt, turning to season evenly. Arrange them on the prepared baking sheet in a single layer with a little space between each piece so the heat can circulate.

To keep the 1950s spirit, I stay close to the original four-ingredient formula, but there’s room for small tweaks. For a smokier flavor, stir 1–2 teaspoons of smoked paprika or a few drops of liquid smoke into the sauce (this does technically add an ingredient, but the character of the dish stays the same). If you like gentle heat, a pinch of cayenne or crushed red pepper can be whisked into the glaze. You can also swap half the ketchup for chili sauce for a slightly spicier, more old-school cocktail-sauce note. For a bit more savoriness without changing the ingredient list, use a slightly darker brown sugar and make sure to salt the chicken evenly; the salt balances the sweetness and tang.
